Thai teenager Channoi became only the second player in the history of the women's game to hit two centuries in the title match, as she led from start to finish in the Chinese city of Dongguan.
Evans is the only other woman to achieve the feat, in her 6-3 final victory over Maria Catalano in 2013.
It was the first time Evans had suffered a defeat in a world final, as world Under-21 champion Channoi completed a unique trophy double in the women's game.
After opening with a 100 break in the first frame, the 18-year-old never looked back in moving 3-1 and 4-2 clear, boosted by a superb 107 break in the sixth frame.
A closing run of 59 in the eighth and final frame enabled her to become only the third Thai player to claim the Mandy Fisher Trophy after Mink Nutcharut in 2022 and Siripaporn Nuanthakhamjan three years ago.
This year's tournament marked 50 years since Vera Selby became the first winner of the competition with a 4-0 win over Muriel Hazeldene in Middlesbrough in 1976.
Channoi is the youngest world champion since Ann-Marie Farren, who claimed the trophy at the age of 16 in 1987 with a 5-1 win over Stacey Hillyard.
She had shown her pedigree by ending Bai Yulu's bid for a third successive victory with a 4-3 win in the quarter-finals, after opening with a break of 74 before defeating Mink 5-3 in the last four.

TNT Sports analyst Evans, a 5-1 winner over three-time winner Ng On Yee in the semi-finals, remains the most prolific winner of the tournament, with 12 victories between 2005 and 2019.
Fellow English players Allison Fisher (seven wins) and Kelly Fisher (five) make up the all-time top three.
